Sometimes people wonder what I eat…
Here you go. It’s healthy. It’s easy. It’s fast. It only dirtied up one small skillet, one knife, and one small cutting board. It didn’t cost much to make. I made it to serve one.
Now what are your excuses for not bringing your own grown up lunch to work???
My Grown Up Lunch – 7/24/12
- 1 Beef Cube Steak
- 1 Bell Pepper
- 1/4 Yellow Onion
- 1 Heirloom Tomato
- 1 T Sweet Chili Sauce* – 10g carb
- 1 T BBQ Sauce – 10g carb
- Salt and Pepper
- 1/2 Cucumber, sliced, bagged
- 1/4 C Almonds, raw, bagged
- 1 Medium Apple, not shown, after lunch snack
How to Prepare…
Spray some PAM on a small skillet and heat it up over med/high heat. Then put the hamburger steak seasoned with salt and pepper into the hot skillet.
Cut up the onions and peppers. Throw them in beside the hamburger steak. After 2-3 minutes stir the pepper/onion mixture and flip the steak.
At this point, add your large chunks of tomato to the skillet and don’t worry about stirring.
While this is cooking for the next 2-3 minutes, slice up your cucumber and bag it up. Measure out 1/4 c almonds and bag it up.
Then come back to your pan and add the BBQ sauce and Sweet Chili Sauce. Stir. Let simmer for 2-3 more minutes. Take off heat and get out the door. Grab an apple for a snack after lunch.
Not too shabby. You know how long it took me to cook this? 15 minutes. Start to finish. I know because I started at 7:30am and finished at 7:45am. I had to be to work by 8:00am, so I put it in a container and walked out the door.
Not to mention, it’s totally diabetic friendly AND heart healthy!
Meal Shown Above + Medium Apple = Diabetic Meal (20g + 22g = 42g)
Lean Protein + Non-starchy Vegetable + Fruit + Healthy Fat (almonds) = Heart Healthy Meal
It’s also budget conscious… I think the whole meal cost me about $3.45 in groceries.
Let’s make more grown up lunches. I know you guys are rich and could buy your lunch every day if you wanted; but, as far as your health goes, we really cannot afford to eat out once per day.
UNLESS what you really wanted was heart disease, diabetes, no money, and a sluggish overweight body. In that case, eat out all the time.
Nah. I didn’t think so. :)

SIDENOTE *Sweet Chili Sauce: You can find this in the oriental section of your grocery store. It’s a great condiment to add a little sweetness, tang, and kick to your foods.
